Argentinian Shrimp with Pea Purée

    Boil water with a pinch of salt.

    Clean the shrimp and slice them along the back. Finely chop the parsley.

    Heat a pan with butter and a bit of olive oil. Sauté the shrimp for a couple of minutes on each side. Add parsley, stir, and cook for another 2 minutes.

    Drop the peas into the boiling water and cook for a few minutes until they float to the surface.

    Drain the peas. Set aside some whole peas for garnish, and place the rest in a bowl. Add a piece of butter and a touch of truffle oil. Blend with an immersion blender until smooth and creamy.

    Plate the shrimp with the pea purée and garnish with the whole peas.
