Creamy Salmon with Vegetables
This dish is somewhere between a hearty soup and a main course, combining the creaminess of the salmon with the freshness of the vegetables.

Prep the Veggies: Peel and chop the vegetables into bite-sized pieces. Remove the skin from the salmon fillet.

Make the Broth: If you have fresh fish, prepare the broth by boiling it, or you can use store-bought fish broth for convenience.

Cook the Vegetables: Once the broth is boiling, add the potato first, followed by the celery, zucchini, bell pepper, squash, and leek. Let them simmer in the broth.

Sear the Salmon: In a hot pan, sear the salmon fillet for 1 minute on each side until lightly golden. Then, place the salmon on top of the vegetables in the pot.
