Halibut with Sweet Potato and Green Apple-Mango Salad

    Place the sweet potato on coarse salt and roast it in the oven until halfway cooked—it should remain firm. Let it cool, slice into thick pieces, and grill or fry until done.

    Remove the skin from the halibut and cut it into two pieces. Sear quickly on both sides in a non-stick pan, then add the salted butter to finish cooking.

    For the salad, dice the peeled green apple and mango into small cubes. Remove the peel and white layers from the grapefruit and lime, then cut them into cubes. Add 2 tablespoons of sesame oil and mix.

    Arrange the halibut and sweet potato on a plate, and top with the fresh, fruity salad.
