Add the strawberries to a blender and blitz until smooth.

Add the cream and sugar to a saucepan and on a very low heat gently bring the mixture to a gentle simmer. Stirring occasionally to ensure the sugar has dissolved.

As soon as the mixture starts to simmer, turn the heat off and add the strawberry purée.

Mix thoroughly until you see the mixture start to thicken and divide it equally between 4 glasses/ramekins.

Place the possets in the fridge for at least 4 hours until set.
