Pea & Crème Fraiche Soup

Place onions in mixing bowl and chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula.

Add butter and, without measuring cup, sauté 3 min/120°C

Add 500 g peas and, without measuring cup, sauté 4 min/120°C

Add water and chicken stock then, with simmering basket in place of measuring cup, cook 15 min/100°C/speed 1

Add crème fraiche, salt and pepper then blend 1 min/speed 5-10, increasing speed gradually

Add remaining 500 g peas and cook 5 min/90°C/speed 1. Divide between serving bowls and serve immediately

Finely slice the onions and add them to a saucepan along with the butter and sauté for 5 minutes.

Then add half the peas plus the stock cube and 500ml of water. Bring it to a gentle simmer.

Then add the crème fraiche and using an immersion blender, blitz until smooth.

Finally, add the remaining half of the peas and gently heat through. Season to taste.
