Mediterranean Veg Pie
If you’ve followed me for a while, you’ll know I am a huge fan of frozen veg! It’s so handy, it’s less wasteful and it’s just as good for you!

Turn the oven to 200 degrees c fan.

Pour the vegetables and chickpeas into a large ovenproof dish and mix. Then make a space in the middle and place the feta in the centre.

Place the dish in the oven for 30 minutes.

During which time, place the mashed potato in a large microwave proof bowl and cover. Then microwave on high for 5 minutes, stopping to stir halfway through.

Once the vegetables have had half an hour, remove the dish and give everything a good mix and then top with the mashed potato.

Finally sprinkle over the cheddar and bake for a further 20 minutes until the top is gold and bubbling.
