    Beat butter and sugar together in a small bowl.

    Mix in egg yolk and then fold in the flour, salt and bicarbonate soda.

    Roll into a log and leave it in the fridge for a couple minutes, until it’s easier to manage (and not too sticky!)

    Butter the top of your brioche buns.

  5. 5

    Roll out a piece of your dough and place on top of brioche buns.

  6. 6

    Bake for 10-15 minutes.

    When it’s fresh out of the oven, slice your buns and slip in your slices of cold butter in between them!!
