Lemon Garlic Tortellini with Fresh Tomatoes and Corn

Sauté corn and tomatoes over medium heat until tomatoes are jammy in a pan with olive oil and minced garlic. Season with salt, pepper, and fresh herbs.

Boil a separate pot of water with salt and add your tortellini and cook according to package instructions.

To the tomato and corn add juice from 1/2 lemon and melt 3tbs butter.

Strain the tortellini and mix it into the buttery veggie mixture.

Serve immediately and add feta or hemp seeds!
