Dian Shui Cooking Technique
A Chinese cooking technique used primarily when boiling dumplings.

Bring a pot of water to a rolling boil and add the dumplings.

Add a cup of cold water to lower the cooking temperature.

Allow the water to come to a boil again, then add 1 more cup of cold water.

Repeat this step one more time (adding a total of 3 cups of cold water).

After the final boil, the dumplings should float to the top and be fully cooked with tender wrappers.
Notes
Ensures the dumplings are evenly cooked while keeping the wrappers intact and preventing them from bursting.
