Happy Monday! I am finally back to post another recipe. I have posted a recipe similar to this in the past, but this one adds a great lemon and herby twist

    cook quinoa according to package instructions and allow to cool

    chop all vegetables

  3. 3

    whisk together lemon juice, olive oil, vinegar, garlic, and spices in a separate bowl

    mix all ingredients in a large bowl

    enjoy! Keep leftovers in your fridge for up to 4 days
