Cauliflower Chickpea Curry

Preheat oven to 400F

Add chipped cauliflower and zucchini to a baking tray, drizzle with oil, and bake for 25-30 min

Sauté chopped onion and carrots in a large pan with oil

Cook on medium heat to soften for 8-10 min

Add the spices and coconut and mix

Add the cooked cauliflower, zucchini, rinsed chickpeas, and kale
