Sweet Potato Hash with Sausage and Eggs

Starting your day with at least 30g of protein everyday is a great way to support your hormones, especially if you are in your luteal or menstrual phase.

    Preheat oven to 400ºF

    Peel & cut your sweet potatoes into small cubes, add to pan with avocado oil, salt, pepper, garlic powder, and smoked paprika. Mix and put in oven for 20 mins

    Cut your sausage into small pieces and add to sweet potato dish, mix and cook for another 20 mins

    While your sweet potatoes are roasting, crack 12 eggs, dash of salt and black pepper, and whisk well. Add to a hot stainless steel pan an scramble

    Take your sweet potatoes & sausage out of the oven and assemble your breakfast! Start with the hash, then eggs, top off with sriracha and cilantro

    Let cool before putting you lids on, store in the fridge for up to a week!

    For serving, heat up for 60-90seconds in the microwave and enjoy!!
