Creamy Red Pesto Chicken Gnocchi

    Add some olive oil and your garlic to a frying pan.

    Add the chicken and cook for a few minutes.

  3. 3

    Add the pepper and tomatoes and cook for around 5 minutes.

    Once the chickens cooked add the gnocchi and cook for a few minutes. I like to slightly crisp up the outside.

    Add the red pesto and cream cheese and mix.

  6. 6

    Add the chicken stock, season with salt & pepper and add the spinach then pop a lid on.

  7. 7

    Simmer for around 5 minutes until gnocchi is cooked and sauce has reduced slightly.

    Plate up and add some fresh basil and parmesan to the top…enjoy!
