    Heat oil in a pot or Dutch oven over medium-high heat, add onion and sauté until soft, about 4-5 mins.

    Add celery, carrots, and garlic and cook 5 mins.

    Season with salt, pepper, and Italian seasoning.

    Add broth, diced tomatoes, and bring to a gentle boil, then lower heat and simmer 15-20 mins.

    Stir in the tortellini and cook for 10 mins.

    Stir in cream, spinach, and cook until wilted.

    Taste and adjust seasonings as needed.

    Garnish with fresh herbs and chili flakes.
