Spinach Egg Cups
Perfect for meal prepping for the busy work week or back to school

Crack eggs into a greased or oiled muffin pan, season with salt and pepper.

Top each egg cup with chopped baby spinach, sun-dried tomatoes, and optional chopped cremini/button mushrooms and green onions.

Add optional pesto.

Bake in the oven at 350F for 11-13 minutes or air fry at 330F for 6-12 minutes.
