Pumpkin Spice Protein Truffles

A sweet no-bake treat with a soft cookie dough filling full of cozy pumpkin + fall spices with a creamy white chocolate coating

Ingredients

Directions

    Mix all the ingredients (minus the add-ins + chocolate coating) until combined into a cookie dough consistency.

    Stir in optional-add-ins of choice.

    Roll into 1/2 - 1 tbsp-sized balls. Freeze for 10 mins.

    Melt vegan chocolate + coconut oil over a double-boiler or in the microwave in 20-sec increments, mixing until smooth.

    Dip truffle balls into chocolate coating. Sprinkle with optional toppings.

  6. 6

    Freeze 20-30 mins or until set. Enjoy or store in fridge.
