Homemade Pumpkin Spice Protein Bars
Soft + chewy pumpkin cookie dough bars studded with chocolate chips for an afternoon / post-workout snack / sweet treat that you can meal prep for the week.

Line a 9x5 loaf pan with parchment paper.

Mix wet ingredients until smooth + combined.

Stir in dry ingredients until combined. Add a bit more coconut oil / maple syrup or flour if too crumbly or too wet + knead with clean hands as needed, until you get a thick-cookie dough texture.

Fold in add-ins of choice.

Press mixture extremely firmly down into pan using a spatula to flatten. Top with more choc. chips, if desired. Freeze for 30 mins, or until firm.

Cut into even bars. Store leftover diy bars in fridge.
