Crispy Rice Paper Dumplings

Whisk together dipping + filling sauce ingredients.

Set aside 2 tbsp of sauce for dumpling filling + whisk in 1/2 tsp tapioca starch.

Whisk in sesame seeds and chopped cilantro to remaining sauce.

Sauté filling ingredients in skillet over med-high heat until tender.

Season with salt, pepper + reserved 2 tbsp sauce.

Set aside until cool for wrapping.

Working with one rice paper at a time, dip into wide low bowl filled with warm water for 5 secs.

Place on flat surface. Wrap each dumpling using a 1 1/2 tbsp spoonful of filling into a small parcel / envelope shape.

Wrap again in another dipped rice paper for a crispier coating.

Fry in single layer in hot pan with oil over med-heat until golden + crispy (3-4 mins per side).

OR Air Fryer Method: Spray dumplings with avo. oil spray. Air fry in single layer at 380F until crispy (12-16 mins - flipping halfway)
