A beautiful recipe inspired by @teakandthyme's cherry galette, perfect for using up any fruit lying around.

    Mix butter into flour - using hands, until its crumbly

    Make a well in the flour and add the ice water - mix until dough is created

  3. 3

    Roll and fold the dough 2 times - wrap and chill in the fridge for 2 hours

    To make the filling, mix all the ingredients together and set aside

  5. 5

    Once chilled, roll out the dough - can be any shape you want

  6. 6

    Pile the fruit mixture into the middle and then fold the edges of the pastry into the middle

  7. 7

    Beat 1 egg and brush the pastry with an egg wash - top this with the large sugar crystals

  8. 8

    Bake for 40-45 mins until golden brown and bubbling


Notes

Great for using up any fruit lying around. Can be served with ice cream.
