Soft, chewy cookies made with the goodness of Kailo Nutrition Look Well: Vanilla-Chai Protein powder, sandwiched around a creamy vanilla protein filling.

    Preheat oven to 175°C and line a baking sheet with parchment paper.

    In a large bowl, mix almond flour, oat flour, protein powder, coconut sugar, cinnamon, baking soda, and sea salt.

    Make a well in the dry ingredients. Add coconut oil, vanilla, almond butter, and flax egg. Mix until dough forms.

    Scoop out 2-tbsp portions of dough, roll into balls, and flatten on the baking sheet. For smaller cookies, use smaller portions.

    Bake for 10-12 minutes, until edges are golden brown. Cool completely.

    Blend all frosting ingredients until smooth. Adjust sweetness and thickness if needed.

    Dollop vanilla protein cream on one cookie, then top with another to form a sandwich. Enjoy!
