One of my favorite ways to use up delicate squash is to ring em, coat em, and fry em

    Blitz the Pop Mmm's into a fine consistency using a blender and place in a low bowl.

    Whisk 2 eggs in a separate bowl.

    Slice the squash into 1" rings. Using a small spoon, carefully remove the seeds from the center of each ring.

    Toss the rings with salt then pass through the egg wash and coat with the Pop Mmm's.

    In a small pot, heat the oil over medium heat. Cook the squash rings 1-2 at a time, for about 2-3 mins per side until golden. Place on a paper lined plate. Set aside

    To make the slaw: blanch the green beans in boiling water for 2 minutes then transfer to an ice bath. Pat dry then remove the ends. Slice into strips diagonally.

    In a bowl, combine the olive oil, vinegar, parsley, pepper, coriander, and salt to taste . Add string beans and toss to coat

    To serve; layer labneh on a plate and top with the string bean salad. Place squash rings around it and serve with a lemon wedge
