One-Pot Harissa Orzo with Figs and Tuna

Dice the onion and mince the garlic. Heat olive oil in a skillet over medium heat. Saute the onion and garlic until softened, about 3-4 minutes. Add the cinnamon and ginger and saute until fragrant, about 1 min. (Optional) Deglaze with white wine. Let it simmer and reduce by 1/2.

Add the tomatoes with a pinch of salt to the pan. Toss then cover and cook for 5 minutes until softened and broken down. Add the harissa and toss to combine.

Add orzo and toss to coat. Cover with 2 cups water and 2 tsp salt. Stir, then cook uncovered for 6-7 minutes. Add remaining cup of water, the 4 chopped figs, and can of tuna then stir to combine. Place the halved figs, flesh side up, on top of the orzo. Cook, uncovered, for an additional 4-5 minutes.

Once the liquid has been absorbed, and orzo is cooked through, remove from heat. Once cooled, garnish with parmigiano reggiano, micro greens, and fresh pepper.
