    Preheat oven to 400F.

    Clean the shrimp and remove the tails. Dice into 1” pieces and set aside.

    Remove the roots from the scallions and discard. Separate the greens from the whites of the scallions and dice the whites. Chop the greens. Dice the red pepper

    Heat 2 tbsp butter in an oven safe skillet over medium heat. Add the white scallions and pepper then sauté, about 4-5 mins. Remove from pan

    Scramble the eggs in a large bowl. Add the scallion greens, chopped shrimp, and season with salt, pepper, coriander.

    Heat the remaining 2 tbsp butter over medium heat in the same skillet. Pour the egg mixture into the pan. Lay the reserved scallions on top vertically and cook, covered, for 8 minutes until set. Once set, place in the oven and broil for 4 minutes. Remove and let cool

    Make the sauce by combining all of the ingredients. Pour over the frittata and serve
