Slice your chuck roast and add to the slow cooker on low. Set aside the xanthan gum and broccoli.

Stir the remaining ingredients together and add to the slow cooker with your roast.

After 6 hours, whisk your xanthan gum with 1-2 tbsp cold water and stir in.

Add your broccoli and cover for another 30 minutes until tender.

Serve over your Palmini rice (prepared according to the packaging) and enjoy.
