Fizzy Matcha Strawberry Sour with Strawberry Float

Heat chopped strawberries, 1/4 cup water, and maple syrup in a saucepan for about 3-4 minutes until bubbly.

Mix together tapioca flour and 1 tsp water in a small bowl until combined, then stir into the strawberry sauce until thickened.

Remove the sauce from heat and set in freezer in a metal container to cool before using.

Mix together one packet of Fizzy Matcha Strawberry Sour and 6 oz cold water in a separate container.

Add sauce to the bottom of a glass, fill with ice, then add fizzy matcha, and top off with heavy cream.
