    Chop sweet potato & zucchini into small cubes and drizzle with olive oil and salt to taste.

    Cook them in the air fryer for about 10 minutes on 425f until lightly browned.

    Add desired amount of salad fixings to a bowl.

    Shake all ingredients for dressing together in a jar and serve over salad.
