Tomatoes and Mozzarella

A nice way to make tomatoes and mozzarella that is same same but different.

    Cut the tomato into roughly 1 inch, uneven shapes.

    Add the tomato to a bowl with a big pinch of salt, stir well.

    Heat the olive oil in a small pan and strip the sage from its stalk.

    Add the leaves to the oil and once they begin to sizzle, fry for a minute or 2 until crisp.

    Discard the garlic if using.

    Discard any water in the bottom of the tomato bowl, then pour over the herby oil and white wine vinegar, mix and set aside for 10 mins.

    Tear up your mozzarella onto a plate and season it with salt.

    Spoon over the tomatoes and all of the herby oil/ vinegar mix in the bowl, finish with the crispy sage leaves, another pinch of salt and some black pepper.
