Early Autumn Pizzas
A couple of recipes for early autumn pizzas, best enjoyed around the table with good friends and @sanpellegrino_uk #ad

Clean and finely slice 2 medium leeks and add them to a roasting tray.

Slice open a large Calabrian sausage (or a regular sausage + a pinch of chilli) and strip the leaves from a stick of rosemary.

Mix well with a pinch of salt and a splash of olive oil, then roast in a hot oven for about 5 mins, stirring, until it has some colour.

I did this as a pizza bianca so no tomato, but you could add some if you like.

Sprinkle that mix straight over the base, then Parmesan, mozzarella, olive oil.

Cook and finish with black pepper when done.

Spread well seasoned tomato passata over the base, top with a handful of thinly sliced courgette coins and some halved cherry tomatoes that have been tossed in a bowl with a big pinch of salt.

Parmesan, lemon zest and olive oil over the top with a pinch of chilli and a pinch of oregano.
