La Cremina del Caffè

A nice way to make coffee as you find in Naples.

    Brew a moka pot and add the first few drops of coffee to a cup with 2 tsp of sugar.

    Return the moka to the heat to finish brewing and stir the coffee and sugar mix vigorously for a minute or two until you have a foamy, creamy texture.

    Pour the coffee and stir through a spoon or two of the cremina, which will float to the surface and give you a lovely sweet flavour and texture.
