    Finely chop the rosemary, parsley, and garlic. Add everything to a pestle and mortar with a few grains of rock salt. Grind to a paste.

    Stir in the zest and juice of 1/2 a small lemon and 2 tbsp olive oil.

    You can also just mix everything together in a bowl which is milder; the pestle and mortar will get more oomph out of the herbs.

    Spoon a bit over the steak while it’s resting and then rest over after slicing.
