Slow Cooker Beef Stew with Dumplings
A moment, a meal, and an ice cold glass of Coca Cola Zero Sugar. Now that’s what I call a recipe for magic.
Ingredients
For the dumplings
Directions
- 1
Pop the diced beef and plain flour straight into the slow cooker and mix well.
- 2
Pour in the beef stock, red wine, Worcestershire sauce, soy sauce and add the tomato paste, onion, carrot, leek, parsnips, and rosemary, and thyme. Stir well then put the lid on and cook on HIGH for 5 hours or LOW for 8 hours.
- 3
Meanwhile, make the dumplings. In a mixing bowl add the-self raising flour, suet, grated parmesan and chopped parsley. Gradually pour in a small amount of water and mix until a dough forms.
- 4
Roll the dough into 8 equal sized dumplings.
- 5
After 4 hours on high (or 7 hours on low), take the lid off the stew and taste for seasoning.
- 6
Pop the dumplings into the stew, half submerged and spaced apart as they will grow. Place the lid back on top and cook for a final hour on HIGH.
- 7
Dish it up and enjoy with an ice cold glass of Coca Cola Zero Sugar.
