Martini Chocolate Mousse

    Melt the chocolate and butter in a microwave or bain-marie until just smooth.

    Whisk the egg yolks with 1 tablespoon of vodka martini.

    Whisk the egg whites with the sugar until you have a thick meringue.

    Whip the cream in a large bowl until soft peaks form.

    Combine the chocolate and egg yolks and stir vigorously, as it will stiffen up quickly.

    Add a little of the whipped cream to help smooth it out if necessary.

    Add the egg white mixture and (remaining) whipped cream to the chocolate mixture and combine until the mixture reaches a smooth, even consistency.

    Sprinkle with a dash of salt, crispy nuts or some seasonal berries.
