Spicy Shredded Chicken

Blend the chilis, garlic, shallots, and oil well.

Stir fry on medium heat.

Add in the lemongrass, galangal, and season it to taste using salt, sugar, and shrimp powder.

Add in the shredded chicken, mix wells, season it again if needed.

Mix all ingredients and knead until mixed well.

Add a bit of food coloring (optional).

Take a bit of the dough (around 30gr), flatten it, put it on the top of dumpling mould, and fill it with the shredded chicken.

Fry in medium heat until cooked.
