Who gets lazy to cook sometimes? This thyme infused pumpkin orzo is ready in a slow cooker and so simple to make for dinner or lunch.

    Finely dice the pumpkin, onion, garlic and put them into a slow cooker along with the thyme, lemon juice and stock. Cook on high for 2 hours.

    Add the orzo and remaining stock and cook for another 40 minutes.

    Make the thyme oil by bringing the ingredients together in a pot over medium heat for 10 minutes allow to cool down while the orzo is cooking.

    Add Parmesan cheese to the pot before serving and dressing with the thyme infused oil.
