Peanut Butter Filled Cupcakes
These are the softest most chocolatiest cupcakes you will ever make! topped with creamy peanut butter icing and filled with gooey peanut butter centre. You have to make them!

Mix the yoghurt, oil, eggs, vanilla and coffee together until well combined. Add the sugar, flour, cocoa powder, salt, baking powder and baking soda together and mix until well combined.

Pour evenly into 12 cupcake shells. They will rise almost double in size. Bake at 170C for 20 minutes.

Make the peanut butter frosting by creaming the butter and peanut butter together for 5 minutes and until doubled in size. Sift in half the powdered sugar and keep beating, then add the other half.

Once the cupcakes are cool, make a small hole using a knife in the centre and fill it with a spoonful of smooth peanut butter.

Pipe the frosting on top and decorate with chopped peanuts and a dusting of cocoa powder.
