Orange and Coconut Cake
This recipe uses two entire oranges, pureed with honey to give you the most intense orange flavour!

Make the syrup: add all the syrup ingredients into a small pot and bring to a boil for 15 minutes. Set aside to cool completely.

Boil the orange with a deep pot with water for 15 minutes. Roughly cup and blitz them while they’re hot with honey until it’s a fine puree.

Whisk together eggs and vanilla for 5 minutes until it’s doubled in size, slowly add the sugar and cooled melted butter. Add the orange and honey puree. Once combined add the rest of the cake ingredients. Pour it into a deep baking dish (I used 34cmx24cm) and bake at 170C for 40 minutes.

Once the cake is hot, pour the syrup on top and top with desicated coconut, place it in the fridge to soak overnight or minimum 4 hours.
