Moroccan Chicken Tagine

    Season the chicken with salt and pepper and cook each side for 2-3 minutes until golden. Set aside.

    Add olive oil to a pan, sauté the onions garlic for 5 minutes until soft and add all the spices, cook for another 5 minutes.

    Add the stock, tomato paste, chickpeas, apricots and cinnamon stick and add the chicken back into the pot and cover and simmer on a low heat for 15 minutes.

    In a seperate pan roast for almonds for a few minutes and top the dish with the almonds and fresh parsley to finish.
