Rice Paper Noodle Japchae (Korean Stir Fried Glass Noodles)

In a pan over medium heat, add cooking 1 tsp of cooking oil and saute carrots until tender, about 2-3 mins. Add shiitake mushrooms and saute for 2 mins. Finally add spinach and saute for 1-2 mins until wilted. Add salt to taste then remove from pan.

Combine soy sauce, sugar, sesame oil, black pepper in a bowl and mix. Heat in microwave for 30 seconds (so sugar dissolves) and mix well. Add sesame seeds then set aside.

On a cutting board, brush the board with some oil. Dip 3 pieces of rice paper in cold water then stack together aligned evenly. Place rice paper on cutting board and brush the top layer with more oil. Cut noodles into 1/2 inch thick noodles or your desired size. Immediately transfer noodles to a bowl of water and soak until ready to eat (no more than 45 mins). Repeat with remaining rice paper.

When ready to eat, drain noodles then add to the bowl with sauce then top with cooked veggies. Garnish with scallions and chili oil.
