    Add the olive oil and red onion to a pan over medium heat and cook for 5 minutes.

    Add in the mushrooms, garlic and tempeh to the pan and stir to combine.

    Cook until the mushrooms are soft (should be 2-3 minutes) then add in the soy sauce, tomato paste and paprika and stir again.

    While this is cooking mash the avocado in a bowl and add the lemon juice, spring onion, salt and pepper.

    Heat up a large pan, place the tempeh mixture onto one half of the taco topped with the grated cheese, fold in half then place in the large pan with a little more olive oil.

    Cook for 1-2 minutes each side.

    Serve with the smashed avocado.
