Sweet yet slightly acidic, juicy tomatoes get cooked down with lots of garlic, basil, olive oil and red wine vinegar, then blitzed up into a deliciously silky, creamy sauce with a good grating of Parmesan.

    Cook down tomatoes with garlic, basil, olive oil and red wine vinegar.

    Blitz up into a silky, creamy sauce.

    Add a good grating of Parmesan.
