Preheat oven to 409 degrees.

Drizzle olive oil on chicken and add your seasonings. Rub seasonings into chicken and season on both sides. Cook in a cast iron skillet for a sear and finish in the oven until chicken reaches an internal temp of 165 degrees.

Shred chicken and add salsa. Mix until well combined.

Prick your sweet potatoes with a fork. Microwave for 5-7 minutes to quickly soften sweet potatoes. Slice sweet potatoes in half.

Add chicken, black beans and cheese to sweet potatoes. Bake sweet potatoes until cheese is melted.

Add the toppings. I did tomatoes, guacamole, Greek yogurt, jalapeños, cilantro, hot sauce, and lime wedge.
