Bonito Sashimi

Episode 4: Bonito sashimi, tomato water seasoned w/ lacto fermented chili water, cherry tomatoes

    Mix tomatoes in blender, bring the mixture to boil, and drain to get the water out.

    Season the tomato water with lacto fermented pepper water and marigold vinegar, season to taste.

    Boil cherry tomatoes for 30 seconds and then peel them in cold water.

    Make the chili oil by infusing low medium heat, neutral oil, bunch of chilis, garlic and aromatic herbs, can add also some coriander seeds. Let infuse until the garlic & pepper are confit. Then out of fire, add chili flakes and smocked paprika, let infuse a bit, and drain.

    Plate the bonito, sauce, cherry tomatoes, purple basil, sea fennel, olive oil, and chili oil.

RECIPE ** I mostly eyeball my preps, these mesures are close, but still approximative, so give it a try, and season to taste, you can do it !! **
