    Make the dressing - mix or whisk together the oil, honey, lime juice, salt and pepper. Set aside.

    Prep the veg - drain and rinse your beans & corn, dice onion, tomato, and capsicum. Slice avocado, jalapeño and coriander into smaller pieces.

    In a large bowl combine the beans, Corn, tomatoes, capsicum, onion, jalapenos and coriander. Drizzle over the dressing and toss to combine.

    Add in the avocado last and toss gently to combine.

    Serve with your favourite meat as a side or use as a dip!
