Beef Burrito Bowl with Avocado Crema

Taco Seasoning

Directions

    In a pan over medium heat, cook the mince. Once it’s almost browned add in your taco seasoning. Remove from heat when done.

    While the mince is cooking, rinse & drain your beans and corn and set aside.

    Make the pico de gallo - Finely dice the onion, tomato and jalapeños. Put them all in a little bowl and squeeze over lime and top with coriander. Mix to combine.

    Cook rice as per packet directions.

    Blend together the avocado, sour cream, jalapeños, lime juice and salt & pepper. (Depending on how big your lime is and what consistency you prefer, you may need to add in splashes of water. Add in little bits at a time)

    Assemble bowls! Just eye ball the servings
