Vegan Pumpkin Scones
Happy Thursday everybody!! I hope you all are having an amazing week and happy we are almost to the weekend! So I made these vegan pumpkin scones the other day and let me tell ya!!! These were so fluffy and gave me a warm hug of all the pumpkin spice flavors when I ate one! These scones are so quick and easy to make and would be best enjoyed with your morning coffee or even just by itself as a fall treat!

Directions

Preheat oven to 400 F.

Mix together your dry ingredients in a bowl.

Add your cubed butter and mix it into the dry mixture with your hands until the butter is pea sized amounts mixed in with the flour.

Next, add the wet ingredients to the dry ingredients and mix until combined.

The dough should be slightly sticky, if the dough is too dry add a little bit of almond milk and if the dough is too wet add a little bit of flour.

Next, place the dough on a floured surface and roll the dough into about a 1 inch thick circle.

Cut the circle into 8 slices kind of like a pizza.

Than place the cut pieces of dough on a baking sheet with parchment paper.

Bake in the oven for about 14 mins until the tops are golden brown.

Once the scones are cooling, make the icing.

Mix together all the icing ingredients until the icing is thick but still spreadable.

Than spread the icing on the cooled scones and let sit for about 15 mins until the icing has set.
