Add all the ingredients together for the blueberry compote and let it simmer for 10 mins and stir it.

Set that aside to cool and mix together all the ingredients until combined.

Spray a pan with oil and add about 1/4 cup of the batter onto the pan.

Cook each side on medium to high heat until golden brown.

Top with maple syrup and the blueberry compote.
