Sweet Potato Black Bean Enchiladas

    Preheat the oven to 355°F/ 180°C and line a baking tray with parchment paper.

    Arrange the sweet potato on the prepared baking tray, drizzle with oil, and sprinkle with spices. Place it in the oven for 30 minutes or until the sweet potato is cooked.

    In a mixing bowl, combine the onions, bell peppers, coriander, beans, and seasonings.

    Spread about 1 cup of tomato sauce or enchilada sauce on the bottom of a baking dish.

    Follow the package instructions to soften the tortillas.

    Place about 2 tablespoons of the filling mixture into each tortilla, roll them up tightly, and place them seam-side down into the prepared baking dish. Repeat with the remaining tortillas and filling.

    Pour the remaining tomato sauce over the tortillas and sprinkle with cheese.

    Bake for 20 minutes or until golden brown and the cheese has melted.
