Preheat oven to 355F / 180C.

Fan fold each sheet of filo, twist the first into a rose shape and spread the others around the rose.

Brush the olive oil, onion and garlic mixture all over and in the sides of the tart case.

Bake for 13-15 minutes until golden coloured.

Mix the custard ingredients together.

Crumble the feta and wilt the spinach.

Sprinkle the spinach and cheeses over the par-cooked pastry.

Pour the custard mix over and bake for another 30-35 minutes on middle to low shelf.

Cool for 5-10 minutes.
