Chickpea Sushi Balls

A super fun to make snack or lunch idea and a great way to use up that leftover cooked rice.

    Add chickpeas into a large mixing bowl and mash using a potato masher or a fork.

    Add in cooked rice, mayonnaise, sriracha soy sauce and nori. Mix everything to combine.

    Using your hands form the mixture into balls.

    Place the balls into a container, add in additional nori, sesame seeds and chilli flakes, pop the lid on and shake it well until all the balls are evenly coated.
