Hot Honey Kimchi Omelette

    Beat eggs in a bowl, seasoned with salt and pepper.

    Heat butter in a pan, spread this all over the pan. Add sliced spring onion, cook for 1 min. Add kimchi and cook for a further 1 min.

    Pour over the eggs evenly. Cook for 1 min then add chives and grated cheese. Cook for roughly 2 mins, use a rubber spatula to slide around the omelette and loosen the sides.

    Flip half over, turn off and cover with a lid for 1 min.

    Serve with chilli oil and a drizzle of honey - enjoy!
